Honestly, the title says it all! The inspiration for this delectable slice of baked goodness came from a visit to a Colombian coffee plantation where, after learning about the complex process needed in order to make the coffee we enjoy at home, we gained a new-found appreciation for the humble coffee cherry. 

 

Naturally, anything involving good coffee is going to be a winner, but to take things to another level, we've made an intensely rich fudgey pound cake (like the ones gran used to make) laced with Colombian espresso and topped with meltingly good caramel and crunchy pecans. It should actually be illegal.
